Packed with fiber, vitamin c, and antioxidants, this salad made with carrots is deliciously bright and refreshing. Support your digestive health and fight disease by incorporating this salad in your diet!

Ingredients

Instructions

  1. Peel the outer layer of carrots to remove the skin/dirt.
  2. Using a hand peeler or food processor, peel carrots into thin ribbon slices.
  3. Once peeled, add to a bowl along with the rest of the ingredients.
  4. Toss to combine.
  5. Allow to rest in the fridge for about 20 minutes before enjoying. Store leftovers in an airtight container in the fridge.
