Granola is a quick way to pack in a great dose of healthy fats and fiber. Oats contain soluble fiber, which works to slow down digestion and binds with the sugar in the honey to decrease the spike in blood sugar that the honey would cause on its own. Flaxseed is a fantastic source of omega-3 which battles inflammation and supports brain and eye health, as well as fiber which contributes to a healthy and happy digestive system. Pistachios and walnuts also are good sources of fiber and contain nutrients that help fight disease.

I always appreciate a recipe that allows for some experimentation and wiggle room and granola definitely falls into that category! This flavor profile was something that I dreamt up, but if there is a different flavor profile you are wanting to try out, I find that granola is a foolproof recipe. Try this recipe, learn the process of making granola, and then make your own recipe. Add in your favorite dried fruits, nuts, or even chocolate chips. The kitchen is your oyster!

One of my favorite sweets is the Mediterranean dessert, baklava. It combines a mix of nuts like pistachios and walnuts with a delicious honey syrup and the perfect balance of spices. This granola captures all those yummy flavors, is quick to make, and only uses natural sugars to add a little bit of sweetness! Any way you choose to eat it it will add a great crunch and supply you with a boost of healthy fats.

  1. Preheat oven to 350 degrees Fahrenheit, and line a baking sheet with parchment paper.
  2. In a large bowl, add 4 cups oats, 1 cup pistachios, 1 cup walnuts, 1/2 cup flaxseed, 1/2 tsp cinnamon, and 1/4 tsp ground cloves. Stir to incorporate ingredients evenly.
  3. In a separate bowl, mix together 1/2 cup honey, 1/2 cup coconut oil, and 1 tsp of vanilla.
  4. Pour wet ingredients over the dry mixture, and using a spoon or your hands, stir mixture until the dry ingredients are thoroughly coated.
  5. Transfer granola to the parchment lined baking sheet and press into an even layer.
  6. Move sheet pan to the oven and bake for 20-25 minutes.
  7. After removing from the oven, allow granola to cool completely before touching. This will ensure you get the chunky consistency you want in a granola!
  8. Transfer to an airtight container and store at room temperature for up to a month for best results.
